We’ll begin with a guided winter walk through Stirchley, foraging for seasonal botanicals—berries, seeds, and fragrant herbs that thrive at this time of year. These wild finds will become the inspiration for your very own gin creation.

Back at our welcoming base, you’ll warm up with a tasting session of infused gins—some crisp and fresh, others spiced and cosy—each paired with tonics and garnishes to highlight their character. This is your chance to discover new favourites and gather ideas before you start compounding your own blend.

The highlight of the course is creating your very own compounded gin. With a choice of wild foraged ingredients and festive botanicals (including warming spices perfect for the season), you’ll craft a bespoke 500ml bottle of gin to take home. It’s a truly personal creation—ideal as a handcrafted Christmas gift, or as a showstopper for your own festive celebrations.

Plenty of tasting is included, so please make sure to arrange alternative transport and do not drive.
